Eligibility Requirements : · Must hold a professional trade qualification in Baking or Cookery · Atleast 1-2 years' experience as a Baker or Pastry Chef or Chef De Partie · Must be proficient in baking and patisserie work · Ready to work in a rostered 7-day week operation and early start hours Summary of Job Responsibilities : · Display accuracy, skill and care during all aspects of dough management specific to all bread, pastry and sweet baking at Breadhead. · Accurate and consistent weighing, mixing, dividing, shaping, proofing and storage of doughs. · Organising the process of loading, baking and unloading of different types and volumes of pastry and small bread items. · Accurate and consistent baking of pastry, sweet baking and small bread items. · Baking what is required each day for the cafe and catering orders. · Control and minimise wastage through accurate and consistent baking. · Observing the quality and size of pastry, bread, sweet baking and at times savoury food produced, and advise the head baker/owner of any changes noticed. · Checking the oven temperatures and monitoring the baking times throughout cooking process to ensure desired result is reached. · Following recipes and maintaining standards of quality, cost control, presentation, flavour, and texture of food. · Completing prep of 'from scratch' sandwich and savoury section components including dressing and sauces from time to time as required. · Cooking, cooling, slicing, and storing veg, chicken, lamb, beef, pork and dairy items. · Preparing savoury and sandwich section items from time to time as required to fill cabinets at the beginning of the day and 'to order' throughout the day. · Working with head baker/owner to ensure section is well organised for effectiveness and efficiency of operation and recommending improvements wherever possible. · Being familiar with and following the Food Control Plan. · Taking responsibility for controlling food costs to achieve minimum wastage. · Planning daily pastry numbers for customers and maintaining production plans. · Understanding, evaluating and maintaining production costs. · Developing a sound knowledge of our products and the ability to answer customer and team queries on ingredients, flavours, dietary precautions, and techniques. · Monitor quantity and quality of ingredients to ensure tight stock control and maintenance of accurate stock levels. · Work in accordance with all health and safety regulations at Breadhead. · Working in a clean and orderly manner at all times as per the company policy. · Assists with cleaning and sanitation of all work areas, utensils, and work equipment. · Ensure all statutory and establishment hygiene regulations are adhered. · Maintains and adheres to high food safety practices within the kitchen.
