This role is a part of ourpopular Sushi section in our Eight Restaurant, featuring 8 cuisines in a live kitchen format.The ideal candidate will have previous experience in a Japanese kitchen, with strong knife skills & presentation skills.
This is a busy role so the ability to work under pressure is a must.
You will also need to have a solid understanding of HACCP, hold a current food hygiene certification and the ability to converse confidently with guests and colleagues.Key Responsibilities will include:Preparation and presentation of all menu items, in particular sushi & sashimiMise en place preparation: garnishes and condimentsSupport the commis chefs in the team, providing training where requiredControl food cost within budgetWork with the Sous Chef's/Executive team to developinnovative products, be creative in the design and implementation of ongoing food conceptsSkills & ExperienceIn addition to the above:Previous experience as a sushi chef, preferably in a high volume environmentProven ability to work in a fast-paced, pressure environmentBe self-motivated & self-disciplinedConfidence interacting with guests in a professional and friendly mannerAn ability to 'think outside the box' and a creative flareBenefitsDiscounts on dining and accommodationFree nights at our overseas hotelsDuty mealsDiscounts on car-parking ($5.50 per day)Uniform provided & laundered for youand the list goes on!
