Edwin Wine Bar & Cellar will open in conjunction with the Melbournes newest luxury hotel Shadow Play by Peppers
in the citys vibrant Southbank arts and entertainment district.
Positioned as one of Melbournes top food & wine experiences, Edwin Wine Bar & Cellar joins the Melbourne restaurant scene in early March 2019. An extensive curated wine list will have a distinct Victorian and low intervention flavour. Our food will share a sense of familiarity yet a sense of refinement with a share plate, micro seasonal food experience. The Edwin cellar will also play host to an ever evolving seasonal wine programme helmed by Edwins sommelier and local wine experts offering a truly unique wine and food experience further reinforcing the brand in the local wine bar scene.
The Sommelier will be responsible for creating a wine list and annual wine programme to support the positioning of Edwin wine bar & cellar as one of Melbournes top food & wine destinations. This role works closely with the kitchen in order to be fully prepared to give wine recommendations in accordance to food pairing to guests as well as ongoing education and training of other staff. This role will be responsible for planning, directing, controlling and coordinating all beverage activities and outlets to ensure the smooth running and profitability of the department. You must have knowledge of a broad spectrum of wines & winemaking in general, and have the ability to connect with a guest in a way that makes them feel comfortable and part of the experience. Furthermore the Sommelier will influence all aspects of the guest wine experience and service delivery to establish a reputation of excellence and create a known identity for the operation, building up a regular client base.
To be successful in this role, you MUST have:
A minimum of 3 years' experience in a similar role with local market knowledge in hospitality industry
The ability to create & implement marketing initiatives with local stakeholders & marketing agencies
Passion, interest and confidence in coffee, wine & spirits with a focus on locally sourced product, ensuring quality and consistency of our offering
Ability to deliver coffee, wine & spirit training programmes to ensure all costings and expectation to capture both in-house and local markets
Success in achieving set targets on cost of goods & ability to control wage costs through effective rostering
A commitment to providing an exceptional dining experience for our guests
Exceptional leadership skills with demonstrated results in developing and motivating teams your lead by example approach will be infectious
Pre-opening and or hatted restaurant experience preferred yet not essential
