Senior Back of House Attendant (Experienced) - Mt Hutt

Working as a Senior Back of House Attendant in our Kitchens and Ice Bar, you will effectively be the engine room of the F&B Department!
This role is not for the faint hearted...it is hard work, and our outlets are extremely busy...however - this is a fun and supportive environment, with plenty of opportunities to improve your culinary skills, work with expert chefs from around the world and make some lifelong friends!
You will be involved in the daily preparation of food, producing the highest quality products while adhering to all food hygiene practices and to all health and safety policies.
Working under the guidance of the Head and Senior Chefs, one of your priorities is to ensure that the kitchen is kept clean and operational at all times, this includes washing dishes and scrubbing pots, keeping kitchen passages clear of boxes and equipment...if you are afraid of hard work- then you need not apply!!
As a senior member of the team you will assist your Head of Department to train, develop and support new employees.
About the role
Preparation of menu items and ski area cuisine adhering to company recipes, and Head Chef Instructions, to ensure consistency
All mis-en-place is prepared fresh with adequate prep, in time for service
Stock control and planning for variances in trading, minimisation of wastage
Washing dishes, scrubbing pots and sterilising equipment
Serving meals to our guests & staff with a smile!
Maintaining a clean and tidy kitchen
Complying with our Food Control Plan and its Daily, Weekly & Monthly Cleaning Schedules
Supporting new employees to achieve their National Certificate in Alpine Operations (you will need to hold this certificate yourself)
Requesting stock via the Storeman, and delivering to the kitchen
Assist in other areas of the department as required

About You
1 winter snow sports season previous experience in a commercial kitchen
A Food Safety or Basic Cookery certificate are desirable
National Certificate in Alpine Resort Operations required
Ability to make multitasking appear effortless.
Excellent customer service skills
Hardworking with stamina - you will need to keep up a great pace all day
High level of personal presentation and hygiene
Willingness and flexibility to assist other areas of the cafe and when required
An understanding that employment is subject to the vagaries of the weather and the hours of work cannot be guaranteed
